Hi! I’m Jaymie – baker and owner of Jaymie Bakes and the Bake Shed in East Dorset, VT. I create my breads and treats out of my newly-renovated home in the historic village of East Dorset in the Northshire area of Southern Vermont.
My baking style is practical. I think like a mom and a savvy consumer, so I try to make a variety of accessible breads and treats that I would look for myself. I try to use local ingredients and quality products that have ingredients I can pronounce; I never add unnatural preservatives.
I learned the basics of baking from my grandmother which is why you will see a lot of European influence in my baking, especially Eastern European flavors. I have also taken several formal classes in NJ/NY/VT, as well as classes from professionals world-wide through the Bread Bakers Guild of America. I continue to study about the science of baking by reading (a lot!) and apply what I learn from classes and reading to recipes I develop.
Color inspires me, as does an odd ingredient challenge. I love shaping bread in eye-catching forms and finding new ways to incorporate bold flavors. I love layering textures, but I also have fondness for a super soft and simple buttery roll.
Outside of the kitchen, you can find me at the Dorset Library, where I serve as a trustee and treasurer, and I occasionally teach baking classes in the area. I’m my teenage daughter’s biggest fan and supporter, so you may also see me at BBA concerts and events!
